fieldを動詞で使ったとき、絶対にthat節を伴わないからです。
まあ…fieldを動詞で使うことはまずないですが…。

(1)too much katakana wordsについて
この場合は、「カタカナの言葉」が多すぎるという意味ですので、too many katakana wordsとすべきだと思います。much katakana wordにすると、「たくさんのカタカナで構成されている」言葉という意味になってしまいます。
(2)thatについて
この文は、文法的には間違っていて、おそらくtoo ～to構文とso ～that構文を混同して使っているのではないでしょうか。このため、貴兄がご指摘のように、so that構文にして、there are too many katakana words in the IT field, so that it is difficult to understand themにするか、there are too many katakana words in the IT field that are difficult to understand のようにする必要があると思われます。
